Ingredients
- 6 cheese (ricotta) ravioli
- 5 silices poached pears
- 1 Tbl. crushed walnuts
- 4oz alfredo sauce or béchamel
- 2oz clarified butter
Poached Pears
- 1 anjou pear peeled and 6 red
- 1 pinch red pepper flake
- 2 pinches of anise seed
- 1/2 cup cider vinegar
- 1/2 cup sugar
- 1/2 cup water
- 1/2 cinnamon stick
- 3 peppercorn Whl.
Poached Pear Directions
Bring All ingredients to a boil. Add pears and simmer for three (3) minutes.
Dish Directions
Heat butter and crushed walknuts. Add poached pears, alfredo, hot cheese, and raviolis.
