Lucrezia Café and Restaurant
Owner, Michael Karas and Chef Patrick Scholz, prepared a sumptuous Veal Saltimboca and a spring Yellow Tomato Salad. Lucrezia, located in Chesterton and Crown Point, is a great place to go on a date and sit outside and enjoy the warmer weather! Below are the recipes of the two dishes they presented.

YELLOW TOMATO SALAD
Yellow tomatoes can be purchased at most farmers markets and upscale food retailers.
Vinaigrette:
Two cups fresh basil leaves
1/4 cup parmesan cheese
1 cup extra virgin olive oil
1 oz. red wine vinegar
salt and pepper to taste
Combine all ingredients for vinaigrette into a blender and blend until smooth. Place yellow tomato wedges on plate and spoon vinaigrette over the tomatoes to your liking. Top with sliced red onions, kalamata olives, gorgonzola cheese, and pine nuts to your liking.
VEAL SALTIMBOCA (per serving)
4 slices veal culets
4 thin sliced proscuitto
4 fresh sage leaves
2 oz. white wine
1 oz. lemon juice
1 TBP butter
1 TBP minced garlic
1 cup flour for dusting
Place veal cutlets on cutting board and cover with plastic wrap. Using a tenderizing hammer (smooth side), pound the veal until it thin about 1/8 in. Pull off the plastic wrap and save it. Turn the veal cutlet over and lay a sage leaf on each cutlet. Lay a thin slice of proscuitto over the sage leaf. Lay the plastic wrap over the cutlet and tenderize by pounding some more. Place flour on a plate. Lightly dust both sides of the cutlets with flour, shaking off any excess flour. Heat olive oil in a sautee pan. Only when oil is hot, place cutlets in pan, proscuitto side down. Cook until proscuitto is crispy, approximately 3 minutes and turn over to finish, approximately 2 minutes. Do not overcook it. Discard olive oil from sautee pan and add garlic, wine and lemon juice to pan stirring occasionally while reducing the liquid to half and then add butter to finish. Add veal back to the pan to warm. Place veal cutlets on platter and pour the white wine garlic butter sauce from the pan over the veal and serve.
