pound Puff Pastry, thawed
2 Tbsp. Unsalted butter
1 cup Hash Browns, frozen
1 cup Red Bell Pepper, diced
½ cup Onion, diced
1 cup Ham Cubes, or 2/3 cup crumbled bacon
11 Extra Large Eggs
2 Tbsp. Fresh Chives, minced
4 ounces Cream Cheese, softened

Tbsp. Orange Juice
1 Extra Large Egg
1 Tbsp. Water
2 Tbsp. Grated Parmesan Cheese
Preheat oven to 400 degrees.
Melt butter in a large nonstick skillet over medium-high heat.
Add potatoes and sauté for 5 minutes. Stir in bell pepper
and onion; sauté 3 minutes, than add ham or bacon.
Whisk eggs and chives together. Add them to the pan and scramble
until just set. Season with salt and pepper to taste; turn off
heat, stir in cream cheese and juice until blended. Refrigerate.
Unfold a pastry sheet on a work surface that’s
been lightly dusted with flour. Roll pastry to 12x10”,
then transfer to a piece of parchment cut to fit a baking sheet.
Trim pastry, fill with half the egg mixture, cut trips on both
sides at a 45-degree angle, and braid. Repeat with remaining
pastry and egg filling. Lift parchment and strudels onto baking
sheets.
Combine remaining egg and water; brush over
top of braids. Sprinkle with cheese and bake 20-30 minutes,
or until golden brown. Let cool 5 minutes before slicing.

Hawk band of Me'tis (may TEE) tribe perform their drumming
circle. This was an incredible experience that you’ll
