Having a party but it seems like you never have enough tortilla chips for the nachos? Well, Mike Petrucelli from the South Bend Tribune has a tip for you!
Nachos are great and it's all built on tortilla chips. But you can't serve a big crowd all that cheaply with store-bought chips. The bag looks big, but the chips don't go very far. For the same price, and a quick trip to the oven, you can make four or five times that many.
First, skip the bag and buy a package of corn tortillas. On a cutting board, stack three or four tortillas together and, using a pizza cutter, slice into quarters. Repeat until you have the amount of chips you want. Toss these in a little vegetable oil, than spread in a single layer on a cookie sheet and bake at 375 for 10-15 minutes. You could fry them in a skillet in about an inch or two of oil, but oil costs money and it's messy to clean up (although I do admit, deep fried tortilla chips are delicious). Shake the pan or flip the chips with tongs every five minutes or so to cook them evenly. Take them out when they're golden and crispy. Sprinkle them with salt and some lime juice and let them cool on paper towels or in a brown paper bag.
This works for flour tortillas too, although don't worry if they brown more than the corn. You can also cut the tortillas into strips and use them in salads or soup, or when you're just looking for something to stuff in your face right out of the pantry.
Enjoy!

Did you know that Botox is used more than just a cosmetic procedure? Dr. Jon Chadwell, from Chadwell Facial Plastic Surgery, gives us the background information on how Botox was first used for strabismus (lazy eyes), blepharospasm (uncontrolled blinking) and migraines. If you are interested in keeping that youthful look but not using the method of needles, Dr. Chadwell suggests that having a good skin care regiment will prevent aging and to always use sunscreen when outside.

Our Experience Michiana segment features the NIBCO Water & Ice Park located on the east bank of RiverWalk Commons in downtown Elkhart. Started as a way to bond the community, the ice skate path includes a circular rink area, the only one like it in the United States. It has a great family atmosphere, so round everyone up and head to Elkhart for some ice-skating!
