On this week’s Vickers Review, Jon recommends seeing the movie, “The Diving Bell and the Butterfly.” Directed by Julian Schnabel, this movie is about Jean-Dominique Bauby, who was the editor for ELLE magazine in France. One day, everything changes for Bauby after he suffers a massive stroke that leaves him paralyzed except for his left eyelid his only means of communication.

We are in the kitchen with Phil Potempa, newspaper columnist for The Times Newspaper of Northwest Indiana and Illinois. He will be talking about his second celebrity cookbook, “More From the Farm Family Recipes and Memories of a Lifetime” that was released in May of this year. The cookbook features more than 200 recipes from his family and celebrities that Phil has interviewed. Phil will also be whipping up a Mock Fannie May Chocolate Mint Cake that will make your mouth water!

Mock Fannie May Chocolate Mint Cake
Ingredients:
Cake
1 stick margarine
1 cup sugar
4 eggs
1 tsp. Vanilla
1 cup flour plus 1 Tbsp.
1 (16-ounce) can chocolate syrup
Mint topping layer
1 stick margarine, softened 2 cups powdered sugar
2 Tbsp. Milk
1 tsp. Peppermint extract
2 drops of green food coloring
Chocolate drizzle decoration
1 cup semi-sweet chocolate morsels
6 Tbsp. Butter |
Instructions:
Preheat oven to 350 degrees. To make cake, blend together margarine, sugar, eggs and vanilla. Add the flour and chocolate syrup. Bake cake in a 9-by-13-inch ungreased pan for 30 minutes. Cool completely. To make creamy mint topping layer, stir all ingredients together and spread on cooled cake. To finish, make chocolate drizzle decoration by melting morsels and butter in a double boiler pan over boiling water. Blend and stir until combined and creamy. Cool just slightly and then pour over the mint-topping layer by turning cake pan to create a drizzle design. Refrigerate before serving. Makes 16 slices |
